Finca El Corozo

 

Finca El Corozo is a farm situated on the slopes of Ilamatepec, a volcano located in the Santa Ana department of El Salvador. The area was decimated by a volcanic eruption in 2005 - covering the farm in over a foot of volcanic ash. Fernando Lima has rebuilt the farm, planting both Pacamara & Bourbon varietals which are thriving in part due to the fertile volcanic soil. Finca El Corozo is sourced and directly traded by KIN + ILK in partnership with Clifton coffee.

Fernando ‘The Don’ Lima

 

Fernando Lima himself has been the winner of many a cup of excellence for his coffees and is confident that Finca El Corozo will achieve this recognition in the future. He is often referred to as the “Don” of coffee in El Salvador.

This is a washed processed coffee, The washed process puts the focus entirely on the bean, this is because the coffee cherry is removed before the drying process. This process highlights the bean’s characteristics and brings out the cleanest and brightest-tasting cups of coffee.

Washed coffee is all about purity and is perfect for our single-origin beans. It allows you to taste all the vibrant notes and distinct flavours of the origin and variety. Our Finca El Corozo has notes of citrus fruits, chocolate and a honey-like sweetness typical to the highest quality coffee of the region.

Direct trade for KIN+ILK is much more than skipping out the middle man. We visit Fernando every year to strengthen our relationship and build trust. When the market price is low we still pay high, the aim is creating a sustainable partnership where the producer can give back to their local community and we can offer the best quality coffee.
